Chorizo and butterbean stew.

As requested by some of you, my delishhhhhhhhhus recipe of chorizo and butterbean stew.

What you will need:

A pinnie and a glass of wine to sip whilst cooking
150g chorizo, chopped
1 garlic clove, crushed
2 tsp rosemary (fresh or dried)
1 tsp paprika
400g peeled cherry tomatoes (you can get these in a tin from the supermarket)
400g butterbeans, drained
230g roasted red peppers, sliced (you can get these ready roasted in a jar)
Bread to serve with the stew

Fry the chorizo until brown, remove and put aside.

Fry the onion in the chorizo juice until golden.

Add rosemary, garlic and paprika, mix together.

Pour in the tomatoes, butterbeans and peppers. Fill the tomato tin half full with water and add to the mixture.

Simmer for twenty minutes to allow the stew to thicken, add chorizo and serve.





And there you have it. Just like that.

Snack attack.

I have to stop reaching for the biscuits, I'm trying to be healthy (and failing miserably).

So I googled healthy snacks and up popped Kale chips.

They look far from tasty but I decided to give them a try and they're actually ok, an acquired taste but a whole lot better for you than biscuits.

This is what you need:

A bag of Kale
Olive Oil
Sea Salt

And this is what you need to do:

Preheat the oven to 180 C and line a baking tray with baking paper.

Remove the thick stems from the leaves and wash and dry thoroughly. Put them onto the baking tray, drizzle with olive oil and season with salt (you can also add chilli flakes for a kick).



Bake for around ten minutes or until the edges are brown. Doesn't look too appetising huh?!



Hmm...Snack away!

Winter sun.

We're going away for some winter sun in February because: a) Tim and I are exhausted and need a change of scene b) I need to feel the sun on my skin and c) well, I think we deserve it.

Nowhere fancy, just Tenerife, but with average temperatures of 23 C I'm not complaining.



I've been feeling down in the dumps for a while and after being diagnosed with mild depression, a burst of vitamin D can only help matters right?!

So now I have a perfect excuse to stop eating biscuits, dig out my Spring wardrobe and shave my legs.
